Fresh Fruit Green Tea

Prep: 15 mins•Cook: 5 mins•Total: 20 mins•Yields: 2 Servings

Ingredients

Servings:2
  • 2 cups strong brewed Jasmine Green Tea (chilled)
  • 1 passion fruit
  • 1/4 fresh pineapple, diced
  • 1/2 orange, sliced into thin rounds
  • 1/2 lemon, sliced into thin rounds
  • 1/2 cup watermelon or strawberries, diced
  • 1/4 cup simple syrup (or honey), adjust to taste
  • Ice cubes

Equipment Needed

  • Large cocktail shaker
  • Muddler
  • Very large serving glasses (minimum 24oz)

Instructions

1

Prepare Fruit

Wash and slice all the fruits. The visual appeal comes from having large, distinct pieces of colorful fruit.

2

Muddle Citrus

Place 2 lemon slices and 2 orange slices into the bottom of a cocktail shaker. Use a muddler to smash them aggressively to release their juices and the essential oils from the peels.

3

Add Passion Fruit

Cut the passion fruit in half and scoop the pulp and seeds into the shaker.

4

Add Tea and Syrup

Pour the chilled Jasmine green tea and the simple syrup into the shaker.

5

Add Ice

Fill the shaker halfway with ice.

6

Shake

Cap the shaker and shake vigorously for 15 seconds to chill the tea and emulsify the citrus oils.

7

Build the Glass

In your large serving glasses, arrange the remaining fresh pineapple, watermelon/strawberries, and remaining citrus slices.

8

Pour

Pour the entire contents of the shaker (liquid, ice, and muddled fruit) over the fresh fruit in the serving glasses.

9

Serve

Serve immediately with a thick straw (for drinking) and a long spoon or fork (for eating the fruit).

Expert Tips

  • • Jasmine green tea is the preferred base because its floral notes pair perfectly with citrus and tropical fruits, unlike black tea which can overpower them.
  • • Leaving the peel on the lemon and orange and muddling them is the secret to a bright, punchy, complex flavor, just don't let it sit too long or the pith will turn bitter.

Variations

  • • Grapefruit Yakult Green Tea: A popular variation replacing mixed fruits with fresh grapefruit juice and a bottle of Yakult (sweet probiotic milk drink).

Frequently Asked Questions

Q: Why is it served in such a massive cup?

A: These drinks are meant to be both a beverage and a snack. The large cup (often 1 liter) is needed to accommodate all the bulky fresh fruit.
