Cooking Tips
- The edges must be sealed perfectly. If cheese leaks into the hot oil, it will cause dangerous splattering and ruin the oil.
- Processed cheese (like Kraft) is traditionally used in Sri Lankan bakeries as it melts into a gooey sauce.
Variations
- Cheese and Potato: Add mashed potato to the cheese mixture for a bulkier filling.
Chef's Notes & Storage
- A highly sought-after vegetarian option at bakeries.
