Mango Crepe (Mango Pancake)

Prep: 30 mins•Cook: 15 mins•Total: 45 mins•Yields: 6 Servings

Ingredients

Servings:6
  • Crepe Batter: 3/4 cup all-purpose flour, 2 tbsp sugar, 3 large eggs, 1 cup milk, 2 tbsp melted butter, 1 tsp vanilla extract, a few drops of yellow food coloring (optional)
  • Filling: 1 cup heavy whipping cream, 2 tbsp powdered sugar
  • 2 large, ripe, firm mangoes

Equipment Needed

  • Non-stick crepe pan or skillet
  • Whisk

Instructions

1

Make Batter

Whisk the eggs, sugar, milk, vanilla, and melted butter. Sift in the flour and whisk until completely smooth. Stir in yellow food coloring if desired.

2

Strain

Strain the batter through a fine mesh sieve to ensure there are absolutely no lumps. Let the batter rest in the fridge for 30 minutes.

3

Cook Crepes

Heat a non-stick pan over LOW heat. Do not oil the pan (or wipe it completely dry if you do). Pour in a small ladle of batter and swirl to coat the bottom thinly.

4

One-Side Cooking

Cook for about 1-2 minutes until the edges pull away and the top is set. DO NOT FLIP. We only cook one side to keep it pristine and un-browned.

5

Cool Crepes

Gently remove the crepe and let it cool completely on a wire rack or parchment paper. Repeat with remaining batter.

6

Prepare Mango

Peel the mangoes and slice them into large, thick, rectangular chunks (the 'cheeks').

7

Whip Cream

Whip the heavy cream with the powdered sugar until it holds stiff peaks.

8

Assemble

Place a crepe on a work surface, cooked-side up (the smooth, uncooked side should face out when folded).

9

Add Filling

Place a dollop of whipped cream in the center. Lay a large chunk of mango on the cream. Cover the mango with a little more cream.

10

Fold into Pillow

Fold the bottom edge over the filling, then fold the left and right sides in. Finally, fold the top down to create a neat, rectangular pillow.

11

Chill

Place the folded pancakes seam-side down on a plate. Chill in the refrigerator for at least 1 hour so the cream firms up.

12

Serve

Serve cold, cut in half to show the beautiful mango and cream layers inside.

Expert Tips

  • • The pan must be on low heat. If it is too hot, the crepe will brown and bubble, ruining the smooth, flawless yellow aesthetic.
  • • The heavy cream must be whipped very stiff so it holds its shape inside the crepe without oozing out.

Variations

  • • Durian Pancake: A very popular alternative utilizing the pungent, creamy flesh of the durian fruit instead of mango.

Frequently Asked Questions

Q: Why do we only cook one side of the crepe?

A: Cooking one side prevents any browning marks. The uncooked side becomes the outside of the 'pillow', presenting a flawless, vibrant yellow surface.
