Fried Wonton Crisps

Prep: 20 mins•Cook: 10 mins•Total: 30 mins•Yields: 6 Servings

Ingredients

Servings:6
  • 1 package square wonton wrappers
  • 150g ground pork
  • 1 scallion, finely minced
  • 1 tsp soy sauce
  • 1/2 tsp sesame oil
  • 1/2 tsp white pepper
  • Water (for sealing)
  • Oil for deep frying
  • Sweet and sour sauce (for dipping)

Equipment Needed

  • Wok or deep fryer

Instructions

1

Mix Filling

In a small bowl, mix the ground pork, minced scallion, soy sauce, sesame oil, and white pepper.

2

Prepare Wrapper

Lay a square wonton wrapper flat on your hand.

3

Add Tiny Filling

Place a VERY small amount of filling (about half a teaspoon) in the dead center. Do not overfill, or the meat won't cook before the wrapper burns.

4

Wet Edges

Dip your finger in water and moisten all four edges of the wrapper.

5

Fold into Triangle

Fold the wrapper in half diagonally to form a triangle, pressing the edges tightly to seal out air.

6

Cross the Arms

Take the two opposite base corners of the triangle, dab one with water, bring them together, and pinch them tightly over the top of the meat filling to form a 'nurse's cap' or 'tortellini' shape.

7

Heat Oil

Heat oil to 350°F (175°C).

8

Fry

Drop the folded wontons into the hot oil.

9

Watch Closely

Fry for exactly 1 to 1.5 minutes. They cook incredibly fast. Turn them once so they brown evenly.

10

Drain

Remove immediately when golden brown and drain on paper towels.

11

Serve

Serve immediately with bright red sweet and sour dipping sauce.

Expert Tips

  • • The filling is minimal on purpose; these are primarily a vehicle for extreme crunch. If you want a lot of meat, make steamed wontons.
  • • Keep the wrappers covered with a damp towel while working so they don't dry out and crack.

Variations

  • • Crab Rangoon: An Americanized version filling the wrapper with cream cheese, imitation crab, and garlic powder.

Frequently Asked Questions

Q: Why did my wontons open up in the oil?

A: You didn't seal the edges tightly enough with water, or you had too much air trapped inside the triangle fold.
