Grate Ginger
Grate a small piece of fresh ginger.
- 4
Combine Dry
Add the chopped vegetables, ginger, cumin seeds, and salt to the rice flour.

Cook on medium heat with a drizzle of oil on both sides until golden brown spots appear and the edges are crispy.
Cooking Tips
- Do not use a rolling pin. Rice flour has no gluten, so the dough will break if rolled. It must be patted by hand.
- Using warm water helps the rice flour bind together better.
Variations
- Vegetable Akki Roti: Add grated carrots or dill leaves to the dough for extra flavor.
Chef's Notes & Storage
- A staple breakfast in Karnataka, best eaten hot straight off the pan.
