Indian Baingan Bharta

Prep: 15 mins•Cook: 30 mins•Total: 45 mins•Yields: 4 Servings

Ingredients

Servings:4
  • large purple eggplants (aubergine/brinjal)
  • mustard oil
  • onions
  • tomatoes
  • garlic (lots)
  • green chilies
  • ginger
  • cumin seeds
  • red chili powder
  • coriander powder
  • fresh coriander

Equipment Needed

  • Gas stove for roasting (or oven)
  • Frying pan

Instructions

1

Prep the Eggplant

Wash and dry a large, dark purple eggplant. Make deep slits into the flesh with a knife. Insert whole garlic cloves and green chilies deep into these slits.

2

Oil the Eggplant

Rub the skin of the eggplant with a little mustard oil. This helps the skin char and peel off easily later.

3

Fire Roast

Place the eggplant directly on an open gas flame. Roast it, turning occasionally with tongs, until the skin is completely charred black and the inside feels extremely soft and collapsed (about 10-15 minutes).

4

Cool and Peel

Place the roasted eggplant in a bowl and cover it for 5 minutes (the steam loosens the skin). Carefully peel off and discard all the blackened skin.

5

Mash the Flesh

Mash the smoky, soft eggplant flesh (along with the roasted garlic and chilies inside it) using a fork. Set aside.

6

Heat Mustard Oil

Heat mustard oil in a pan until it smokes, then lower the heat. Add cumin seeds.

7

Sauté Onions

Add a large amount of finely chopped onions. Sauté until they turn translucent and light pink (do not brown them completely).

8

Add Aromatics

Add finely chopped ginger and more fresh green chilies. Sauté for a minute.

9

Cook Tomatoes

Add chopped tomatoes, salt, a pinch of turmeric, coriander powder, and red chili powder. Cook until the tomatoes are completely soft and mushy.

10

Combine and Cook

Add the mashed roasted eggplant to the onion-tomato masala. Mix thoroughly.

11

Bhunao (Stir-fry)

Cook the mash on medium-high heat for 7-10 minutes, stirring continuously, until all the excess moisture evaporates and the oil starts leaving the sides.

12

Garnish and Serve

Turn off the heat. Stir in a huge handful of fresh coriander leaves. Serve hot with Phulkas, Parathas, or Bajra Roti.

Expert Tips

  • • The entire character of this dish relies on the smoky flavor. Roasting directly on a flame or hot coals is essential. Boiling or microwaving the eggplant will ruin the dish.
  • • Keep the spicing minimal. Heavy spices like garam masala overpower the delicate smoky flavor of the eggplant.

Variations

  • • Bihari Chokha: Skips the cooking part. The roasted mashed eggplant is simply mixed with raw chopped onions, green chilies, raw mustard oil, and salt.

Chef's Notes & Storage

•

A rustic, winter favorite across North India, particularly in Punjab and Bihar.

Frequently Asked Questions

Q: How do I roast it if I have an electric or induction stove?

A: You can broil it in the oven on the highest setting, turning it frequently until charred, but it won't be quite as smoky.
