Ingredients
Scaled for 4 servings
- large purple eggplant (aubergine)
- onions
- tomatoes
- garlic
- green chilies
- ginger
- mustard oil
- cumin seeds
- coriander powder
- fresh coriander
Equipment
- Open gas flame or grill
- Wok (kadai)
Instructions
- 1
Prep Eggplant
Wash a large, light-weight purple eggplant. Make 4-5 deep slits all around it using a knife.
- 2
Stuff Garlic
Push whole peeled garlic cloves and green chilies deep into the slits. This infuses the eggplant from the inside while roasting.
- 3
Oil the Eggplant
Rub a few drops of oil all over the skin of the eggplant to make peeling easier later.
- 4
Fire Roast
Place the eggplant directly on an open gas stove flame or a charcoal grill. Roast, turning occasionally with tongs.
- 5
Check Doneness
Roast until the skin is completely charred, black, and flaky, and the inside feels extremely soft and collapses.
- 6
Peel and Mash
Let it cool slightly, then peel off and discard all the blackened skin. Roughly chop and mash the smoky flesh, garlic, and chilies together.
- 7
Heat Mustard Oil
Heat mustard oil in a wok until it smokes, then lower the heat. Add cumin seeds to splutter.
- 8
Sauté Onions
Add finely chopped onions and sauté until translucent and soft.
- 9
Add Aromatics
Add grated ginger and a little more finely chopped garlic. Sauté for a minute.
- 10
Cook Tomatoes
Add chopped tomatoes, salt, turmeric, red chili powder, and coriander powder. Cook until tomatoes are completely mushy.
- 11
Add Eggplant
Add the mashed smoky eggplant to the pan. Mix well, breaking it down further.
- 12
Dry Roast
Cook on medium heat for 5-7 minutes until the moisture evaporates and the oil separates. Garnish with fresh coriander and serve with hot rotis.
Cooking Tips
- The eggplant must be fire-roasted over an open flame to get the authentic smoky flavor. Oven-baking it will make it taste like a casserole.
- Choose an eggplant that feels light for its size; heavy ones have too many hard seeds.
Variations
- Aloo Baingan: A non-smoky, stewed version of eggplant cooked with potatoes.
Chef's Notes & Storage
- A winter favorite in Punjab, usually eaten with Phulkas (flatbreads) and a side of raw onions.
