- boiled potatoes
- cucumbers
- tomatoes
- onions
- beetroot (boiled)
- sandwich masala or chaat masala
- cheese (optional)
Equipment

Instructions
- 1
Prep the Vegetables
Boil a potato and a beetroot. Slice them into very thin rounds. Slice cucumbers, tomatoes, and onions into equally thin rounds.
- 2
Butter the Bread
Take two slices of soft white sandwich bread. Generously apply salted butter to the inside of both slices. (The butter acts as a waterproof seal).
- 3
Apply Chutney
Smear a thick layer of spicy mint-coriander green chutney over the butter on both slices.
- 4
Layer 1: Potatoes & Beets
On one slice, lay down a slightly overlapping layer of boiled potato slices, followed by beetroot slices.
- 5
The Masala Magic
Sprinkle a generous pinch of 'Sandwich Masala' (or Chaat Masala) over the potatoes. This is crucial for the street-food taste.
- 6
Layer 2: Crunchy Veggies
Add a layer of cucumber slices, then tomato slices, and finally onion rings.
- 7
More Masala
Sprinkle another pinch of masala over the top layer of vegetables.
- 8
Close the Sandwich
Place the second slice of bread (chutney side down) on top. Press gently.
- 9
Butter the Outside
Generously butter the outer sides of both slices of bread.
- 10
Toast/Grill
Place in a sandwich toaster or on a hot grill pan. Toast until the outside is golden brown and incredibly crispy.
- 11
Cut
Remove from the grill. Cut diagonally into 4 triangles.
- 12
Garnish and Serve
For the true street-side experience, apply a little more butter and chutney on the crusty exterior, and bury the sandwich under a mountain of fine Sev. Serve with ketchup.
Cooking Tips
- Do not skip buttering the bread before applying the wet green chutney, or the sandwich will become soggy from the inside out.
- The slices of vegetables must be paper-thin so the sandwich doesn't fall apart when you bite into it.
Variations
- Bombay Club Sandwich: Add a third slice of bread in the middle and a thick layer of grated cheese.
Chef's Notes & Storage
- A fast-paced, carb-heavy snack designed to keep the busy office workers of Mumbai running through the day.
