Ingredients
Scaled for 4 servings
- white bread slices
- potatoes
- gram flour (besan)
- green chilies
- fresh coriander
- turmeric
- red chili powder
- ajwain (carom seeds)
- salt
- oil for frying
Equipment
- Deep wok (kadai)
- Mixing bowls
Instructions
- 1
Boil Potatoes
Boil the potatoes until completely tender, then peel them.
- 2
Mash Potatoes
Thoroughly mash the potatoes in a bowl, ensuring there are no large lumps.
- 3
Spice the Filling
Mix the mashed potatoes with chopped green chilies, fresh coriander, red chili powder, and salt.
- 4
Prepare Dry Batter
In a separate wide bowl, mix the gram flour (besan), a pinch of turmeric, crushed ajwain seeds, and salt.
- 5
Make Wet Batter
Gradually add water to the besan, whisking continuously to form a smooth, lump-free batter of medium consistency.
- 6
Stuff Sandwich
Take a slice of bread and spread a thick, even layer of the potato filling on it.
- 7
Close Sandwich
Cover with another slice of bread and press down firmly so it sticks together.
- 8
Cut
Cut the sandwich diagonally to create two triangles.
- 9
Heat Oil
Heat a deep wok with plenty of oil on medium-high heat for frying.
- 10
Dip
Dip a bread triangle into the besan batter, turning it quickly to ensure all sides (especially the edges) are completely sealed and coated.
- 11
Fry
Carefully slide the coated sandwich into the hot oil. Fry until the bottom side is golden brown.
- 12
Flip and Drain
Flip carefully and fry the other side until crispy. Drain excess oil on paper towels and serve immediately.
Cooking Tips
- The besan batter must not be too thin, otherwise the bread will absorb the oil and become incredibly soggy.
- Ensure the edges of the sandwich are well-coated in batter so the oil doesn't seep into the potato filling.
Variations
- Paneer Bread Pakora: Place a thin slice of paneer between the potato layers before sealing the sandwich.
Chef's Notes & Storage
- Usually served with a cup of hot masala chai and sweet tamarind chutney.
