Ingredients
Scaled for 4 servings
- cabbage
- freshly grated coconut
- mustard seeds
- cumin seeds
- green chilies
- curry leaves
- turmeric
- shallots (small onions)
- coconut oil
- urad dal (black gram)
Equipment
- Wide pan or wok (Cheena chatti)
Instructions
- 1
Shred the Cabbage
Finely shred or chop the cabbage. Wash it and drain all the excess water thoroughly.
- 2
Crush the Coconut
In a small blender, pulse freshly grated coconut, cumin seeds, shallots, green chilies, and a pinch of turmeric. Do not add water; it should be a coarse, dry crush.
- 3
Heat Coconut Oil
Heat coconut oil in a wide pan. The flavor of coconut oil is non-negotiable for authentic Kerala dishes.
- 4
Temper Spices
Add mustard seeds and let them splutter. Add a teaspoon of urad dal and fry until golden.
- 5
Add Aromatics
Toss in dried red chilies and a handful of fresh curry leaves. Sauté for 10 seconds.
- 6
Add Cabbage
Add the shredded cabbage to the pan. Toss it well with the tempered oil.
- 7
Add Salt
Add salt to taste. Do NOT add any water. The cabbage will release its own moisture.
- 8
Cover and Cook
Cover the pan with a lid and cook on low heat for 3-4 minutes. You want the cabbage to be tender but still retain a slight crunch.
- 9
Add Coconut Mixture
Remove the lid. Make a small well in the center of the cabbage and place the crushed coconut mixture in it.
- 10
Steam the Coconut
Cover the coconut mixture with the surrounding cabbage, put the lid back on, and let it steam for 2 minutes.
- 11
Final Toss
Remove the lid and mix everything together thoroughly. Sauté on medium-high heat for 2 minutes to evaporate any remaining moisture.
- 12
Serve
Serve warm. It is typically served as a side dish with rice and Kerala-style fish curry or sambar.
Cooking Tips
- Do not overcook the cabbage. Thoran should be dry and the vegetables should maintain a slight crunch, not be mushy.
- Always use fresh or frozen grated coconut. Desiccated coconut will make the dish dry and less flavorful.
Variations
- Beans Thoran: Use finely chopped green beans instead of cabbage using the exact same method.
Chef's Notes & Storage
- An essential side dish in the grand Kerala 'Sadhya' (traditional vegetarian feast served on a banana leaf).
