Ingredients
Scaled for 6 servings
- all-purpose flour (maida)
- besan (gram flour)
- yogurt (slightly sour)
- baking soda
- sugar
- water
- saffron strands
- cardamom powder
- lemon juice
- ghee or oil for frying
Equipment
- Squeeze bottle or piping bag
- Wide, flat frying pan
Instructions
- 1
Prepare the Batter
In a bowl, whisk maida (flour), a spoonful of besan, and slightly sour yogurt. Add water to make a smooth, lump-free batter (consistency of thick pancake batter).
- 2
Fermentation (Crucial Step)
Cover and let the batter ferment in a warm place for 12-24 hours. It should smell slightly sour and have tiny bubbles.
- 3
Prepare Sugar Syrup
Boil sugar and water to a 1-string consistency (it should form a single thread when pulled between your thumb and index finger).
- 4
Flavor the Syrup
Add cardamom powder, saffron strands (for color), and a few drops of lemon juice (prevents the sugar from crystallizing). Keep the syrup warm.
- 5
Prep the Batter for Frying
Add a tiny pinch of baking soda to the fermented batter and mix gently. Pour the batter into a squeeze bottle or a zip-lock bag with a tiny hole cut in the corner.
- 6
Heat Ghee/Oil
Heat ghee or oil in a wide, flat pan (not a deep kadai). The oil should be exactly 1 inch deep and medium-hot.
- 7
Pipe the Jalebis
Squeeze the batter into the hot oil in a concentric circular motion (2-3 circles) ending with a line across the middle to lock the shape.
- 8
Fry to Crisp
The jalebis will instantly puff and float. Fry on medium heat until they are incredibly crispy and golden on both sides.
- 9
Immediate Syrup Soak
Lift the hot, crispy jalebis with tongs, drain the oil for a second, and immediately plunge them into the warm sugar syrup.
- 10
The Soak Time
Press them down into the syrup for exactly 30-40 seconds. (Too long, and they become soggy; too short, and the center remains dry).
- 11
Remove and Drain
Remove them from the syrup and place them on a wire rack to drain excess syrup.
- 12
Serve
Serve hot, ideally alongside cold Rabdi (sweet thickened milk) or Fafda.
Cooking Tips
- The syrup MUST be warm and the Jalebi MUST be hot. If either is cold, the jalebi will not absorb the syrup.
- If your jalebis are flat, the batter was too thin or not fermented enough. If they are soft, the oil was too hot.
Variations
- Instant Jalebi: Uses Eno or baking powder instead of overnight fermentation, though it lacks the authentic sour tang.
Chef's Notes & Storage
- A staple morning breakfast in North India, often paired with savory snacks to balance the intense sweetness.
