Indian Medu Vada

Prep: 240 mins•Cook: 25 mins•Total: 265 mins•Yields: 4 Servings

Ingredients

Servings:4
  • urad dal (split skinless black gram)
  • green chilies
  • ginger
  • curry leaves
  • black peppercorns (whole or crushed)
  • cumin seeds
  • onion (optional)
  • rice flour (optional)
  • oil for deep frying

Equipment Needed

  • Wet grinder or powerful blender
  • Deep frying wok (Kadai)

Instructions

1

Soak Dal

Wash and soak the Urad Dal in water for 3 to 4 hours (do not soak longer, or the vadas will absorb too much oil).

2

Drain Completely

Drain the water entirely. This is crucial—any excess water will ruin the batter.

3

Grind to Paste

Grind the dal in a blender or wet grinder into a smooth, thick paste. Add ice-cold water only a spoonful at a time if the blender gets stuck.

4

Aerate the Batter

Transfer the thick batter to a bowl. Using your hand, beat the batter vigorously in a circular motion for 5 minutes to incorporate air. It will become pale and fluffy.

5

The Float Test

Drop a small pinch of batter into a bowl of water. It must float on top instantly. If it sinks, beat it for a few more minutes.

6

Flavor the Batter

Add finely chopped green chilies, ginger, curry leaves, crushed black peppercorns, cumin seeds, and salt. (Add a spoon of rice flour for extra crispness if desired).

7

Heat Oil

Heat oil in a deep kadai. The oil should be medium-hot.

8

Wet Your Hands

Wet your palms with water. Take a lemon-sized ball of batter in your right hand.

9

Shape the Donut

Flatten the batter slightly and use your thumb to make a hole directly in the center.

10

The Drop

Carefully invert your hand over the hot oil and gently slide the shaped vada into the oil.

11

Fry to Golden

Fry on medium heat. Do not crowd the pan. Flip them occasionally until they are deep golden brown and crisp on both sides.

12

Serve

Drain on paper towels. Serve piping hot with Coconut Chutney and a bowl of steaming Sambar.

Expert Tips

  • • The hole in the center is not just for aesthetics; it increases the surface area, ensuring the vada cooks evenly all the way through without leaving the inside raw.
  • • If you struggle to shape it by hand, shape it on a wet banana leaf or the back of a wet steel strainer, and slide it into the oil.

Variations

  • • Maddur Vada: A flatter, denser cousin from Karnataka made with semolina, rice flour, and lots of onions.

Chef's Notes & Storage

•

The most iconic breakfast companion to Idli across all of South India.

Frequently Asked Questions

Q: Why is my batter too watery to shape?

A: You added too much water while grinding. You can try saving it by adding a little rice flour or semolina, but the texture will change.
