Instructions
- 1
Prepare the Yogurt
Whisk thick, cold yogurt with a tablespoon of sugar and a pinch of salt until it is completely smooth and velvety. Keep it chilled.
- 2
Prep Toppings
Finely chop boiled potatoes and boiled white chickpeas. Mix them with a pinch of chaat masala.
- 3
Lay the Foundation
On a large, flat serving platter, arrange the crispy Papdis in a single layer.
- 4
Add the Filling
Place a small spoonful of the potato and chickpea mixture carefully on top of each Papdi.
- 5
Drizzle Green Chutney
Drip a small amount of spicy mint-coriander chutney over the potatoes on each Papdi.
- 6
Drizzle Tamarind Chutney
Drip sweet and sour tamarind-date chutney over the same.
- 7
Smother in Yogurt
Using a spoon, generously pour the chilled, sweetened yogurt over the entire platter, ensuring every Papdi is covered.
- 8
Second Chutney Layer
Drizzle beautiful, thin lines of both the green and brown chutneys over the white yogurt for visual contrast.
- 9
Spice Dusting
Liberally sprinkle roasted cumin powder, chaat masala, and a dash of bright red chili powder over the top.
- 10
Add Crunch
Heavily garnish the platter with fine nylon Sev.
- 11
Final Garnish
Sprinkle fresh chopped coriander leaves and bright red pomegranate arils for a burst of color and sweetness.
- 12
Serve Immediately
Serve instantly. The magic of Papdi Chaat is the textural contrast of the cold, soft yogurt against the crisp, crunchy Papdi.
Cooking Tips
- The yogurt must be very thick. If it is watery, the Papdis will instantly turn soggy.
- Store-bought Papdis work perfectly, but ensure they are fresh and crisp.
Variations
- Aloo Papdi Chaat: Skip the chickpeas and use only spiced potatoes.
Chef's Notes & Storage
- Visually stunning and texturally complex, this is the most elegant of all the Indian Chaat preparations.
