Ingredients
Scaled for 4 servings
- thick poha (flattened rice)
- onions
- potatoes
- fennel seeds (saunf)
- mustard seeds
- turmeric
- sugar
- lemon
- Indori sev (spicy crunchy snack)
- fresh jalebis (store-bought or homemade)
Equipment
- Colander
- Wide pan with lid (kadai)
Instructions
- 1
Rinse Poha
Place the thick poha in a colander. Rinse it gently under running water for 30 seconds until just softened. Do not soak it.
- 2
Season Poha
Leave the poha in the colander to drain. Sprinkle sugar, salt, and a pinch of turmeric powder directly over the wet poha and toss gently.
- 3
Chop Veggies
Finely chop onions and green chilies. Cut potatoes into very small cubes.
- 4
Heat Oil
Heat oil in a wide pan or kadai.
- 5
Temper Crucial Spices
Add mustard seeds and let them crackle. Then add fennel seeds (saunf) and whole coriander seeds. This specific tempering defines Indori Poha.
- 6
Sauté Aromatics
Add the chopped green chilies, curry leaves, and onions. Sauté until onions are translucent.
- 7
Cook Potatoes
Add the diced potatoes and a pinch of salt. Cover and cook until the potatoes are completely tender.
- 8
Add Poha
Add the softened, seasoned poha into the pan.
- 9
Mix Gently
Toss everything together very gently. The turmeric will give it a bright yellow color.
- 10
Steam
Cover the pan with a tight lid and let it steam on very low heat for 3-4 minutes to make the poha fluffy and hot.
- 11
Finish
Turn off the heat. Squeeze fresh lemon juice generously over the top.
- 12
Assemble and Serve
Serve the hot poha topped generously with spicy Indori Sev, raw chopped onions, and pomegranate seeds. Serve immediately alongside piping hot, crispy Jalebis.
Cooking Tips
- Do not wash the poha too vigorously or soak it in water, or it will turn into a mushy paste.
- The fennel seeds (saunf) are absolutely mandatory; they give Indori Poha its distinct, sweet-aromatic flavor.
Variations
- Tari Poha: Serve the poha with a spicy, watery chickpea curry (Usal) poured over it, popular in Nagpur.
Chef's Notes & Storage
- The contrast between the soft, savory, lemony poha and the hot, crispy, sugar-syrup filled jalebi is a culinary masterpiece of Central India.
