Ingredients
Scaled for 1 serving
- ciabatta or crusty bread roll
- prosciutto crudo (Parma or San Daniele, thinly sliced)
- fresh mozzarella di bufala
- extra virgin olive oil
- fresh basil leaves (optional)
- black pepper
Equipment
- Knife
Instructions
- 1
Slice Bread
Slice the ciabatta roll in half horizontally. If the bread has too much crumb (interior), you can pull a little out to make room for the filling.
- 2
Drizzle Oil
Drizzle a generous amount of high-quality extra virgin olive oil on both the top and bottom halves of the bread.
- 3
Layer Prosciutto
Drape the thinly sliced prosciutto crudo generously over the bottom half of the bread. Do not lay it flat; let it ribbon and fold to create volume.
- 4
Slice Mozzarella
Slice the fresh mozzarella into thick rounds. If it is very wet, pat it dry with a paper towel briefly.
- 5
Add Cheese
Layer the mozzarella slices evenly over the prosciutto.
- 6
Season
Crack some fresh black pepper over the mozzarella. (Do not add salt, as the prosciutto is already salty).
- 7
Add Basil
If using, scatter a few fresh, torn basil leaves over the cheese.
- 8
Close and Press
Place the top half of the ciabatta on the sandwich and press down gently to meld the ingredients.
- 9
Cut
Cut the sandwich in half diagonally if desired.
- 10
Serve
Serve immediately for a perfect, classic Italian lunch.
Cooking Tips
- The quality of the ingredients is everything here. Do not use cheap olive oil or pre-packaged dry mozzarella.
- The prosciutto must be sliced paper-thin so it melts in the mouth rather than being chewy.
Variations
- Add Arugula: Add a handful of peppery wild arugula (rocket) for a bitter contrast to the rich cheese and meat.
Chef's Notes & Storage
- This is the standard 'pranzo veloce' (quick lunch) grabbed from a salumeria during a workday in Italy.
