Ingredients
Scaled for 2 servings
- fresh strawberries (ripe and sweet)
- Prosecco (chilled)
- simple syrup or powdered sugar (only if berries are tart)
- lemon juice (a few drops)
Equipment
- Blender
- Fine mesh sieve
- Champagne flute
Instructions
- 1
Wash and Hull
Wash the fresh strawberries and remove the green hulls.
- 2
Purée
Blend the strawberries until completely smooth.
- 3
Taste and Adjust
Taste the purée. If the strawberries are tart, add a tiny splash of simple syrup and a drop of lemon juice to brighten the flavor.
- 4
Strain
Pass the purée through a fine mesh sieve to remove all the tiny seeds. This ensures a smooth, elegant cocktail.
- 5
Chill
Place the smooth strawberry purée in the refrigerator until completely chilled.
- 6
Prepare Glass
Use chilled champagne flutes.
- 7
Add Purée
Spoon 1 to 1.5 oz of the cold strawberry purée into the bottom of the flute.
- 8
Add Prosecco
Tilt the glass slightly and slowly pour in 3 oz of chilled Prosecco.
- 9
Stir Gently
Use a long stirrer or bar spoon to gently fold the heavy purée up into the wine until it turns a uniform ruby red.
- 10
Serve
Serve immediately. Optionally garnish with a small strawberry slice on the rim.
Cooking Tips
- Straining the seeds is mandatory for a good texture.
- As with the Bellini, all ingredients must be freezing cold, as ice is never added to the glass.
Variations
- Tintoretto: Made with pomegranate juice instead of strawberry (popular in autumn).
Chef's Notes & Storage
- Named after the Italian composer Gioachino Rossini, known for his lively and bright music, which matches the drink's profile.
