Cooking Tips
- Always make a cold paste first before adding to boiling water — this is the key to preventing lumps.
- Stir continuously throughout cooking to avoid the thick batter sticking and burning on the bottom.
- The consistency is a personal preference — add more water for a thinner, more drinkable kanda.
Variations
- Savory: Skip the jaggery and serve the plain porridge with coconut sambol or a side of curry for a savory breakfast.
- Spiced: Add a pinch of cardamom and a tiny grating of nutmeg for a warmly spiced version.
Chef's Notes & Storage
- Kurakkan Kanda is considered one of the healthiest traditional Sri Lankan breakfast options, extremely high in calcium and iron.
- Storage: Best consumed fresh. Thickens considerably as it cools.
