Ingredients
Scaled for 4 servings
- tuna (fresh or canned)
- goraka (gamboge/Malabar tamarind)
- black pepper
- red chili powder
- turmeric
- garlic
- curry leaves
- pandan leaf
- salt
- water
Equipment
- Clay pot (essential)
- Knife
Instructions
- 1
Prepare Goraka
Soak the goraka pieces in a cup of warm water for 15 minutes until softened. Squeeze the pieces to extract as much sour liquid as possible. Reserve both the soaking water and the pieces.
- 2
Make Spice Paste
Combine the soaked goraka with black pepper, red chili powder, turmeric, garlic, and salt into a coarse paste using a mortar and pestle or small blender.
- 3
Coat Fish
Cut the tuna into thick steaks. Rub the spice paste generously all over each piece.
- 4
Layer in Clay Pot
Place curry leaves and pandan leaf in the bottom of a clay pot. Layer the coated fish steaks on top.
- 5
Cook Slowly
Pour the goraka soaking water around the fish. Cook on low heat, covered, for 20 minutes until the liquid reduces and the fish is cooked through. Remove the lid and cook for a final 5–10 minutes until the sauce is nearly dry and the fish has a dark, sticky coating.
Cooking Tips
- Ambulthiyal is specifically a dry curry — the final dish should have very little liquid.
- Goraka (gamboge) is what makes ambulthiyal unique. It cannot be substituted with tamarind as the flavor profile is completely different.
- A clay pot is essential — the slow, even heat of clay is required to properly develop the intense, concentrated flavors.
Variations
- Canned Tuna Ambulthiyal: Use canned tuna in water for a quick weekday version.
- Mackerel Ambulthiyal: Use fresh mackerel fillets as an alternative to tuna.
Chef's Notes & Storage
- Ambulthiyal is the most famous preserved curry of Sri Lanka — due to its intense sourness, it can keep at room temperature for up to 5 days without refrigeration.
- Storage: Remarkable shelf life. Keeps at room temperature for 3–5 days. Refrigerate for up to 2 weeks.
