Drain & Serve
Drain on paper towels. Serve hot with lime wedges and chili sauce.
Cooking Tips
- The prawn or sprat must be pressed firmly into the batter — it is the defining visual and textural element of isso vadai.
- Ensure the batter is thick enough to hold the seafood — too thin and the prawn will fall off.
- Serve immediately — isso vadai loses its crispiness quickly.
Variations
- Prawn Isso Vadai: Use fresh whole small prawns instead of dried sprats for a more luxurious version.
- Vegetarian Vadai: Skip the seafood and make a plain masala vadai.
Chef's Notes & Storage
- Isso Vadai is synonymous with Galle Face Green, Colombo's famous oceanside promenade where vendors sell them at sunset.
- Storage: Best eaten immediately. Not suitable for storage.
