How to Ripen Avocados Rapidly in a Paper Bag

Need guacamole for a party tomorrow, but the grocery store only has rock-hard avocados? Harness the power of ethylene gas to speed-ripen them overnight.

How to Ripen Avocados Rapidly in a Paper Bag

The Avocado Frustration

Avocados are notoriously finicky. They seem to exist in two states: rock hard and completely rotten, with a magical window of perfect ripeness that lasts roughly 45 minutes.

If you are planning a taco night and can only find bright green, hard-as-stone avocados at the supermarket, leaving them on the counter might take 4 to 5 days for them to soften naturally. But if you understand plant biology, you can force them to ripen in a fraction of that time.

The Power of Ethylene Gas

Certain fruits, known as climacteric fruits, continue to ripen after they are picked. As they do, they emit a colorless, odorless plant hormone called ethylene gas. This gas triggers a chain reaction, breaking down the cell walls and converting starches into sugars, which makes the fruit soft and sweet.

  • When an avocado sits on the open counter, the ethylene gas it produces dissipates into the large volume of air in your kitchen.
  • If you trap that gas in a small, enclosed space, the concentration of ethylene skyrockets, forcing the avocado to rapidly ripen itself.
  • Certain other fruits are "super-producers" of ethylene gas. By pairing an avocado with one of these fruits, you supercharge the ripening process.

Step-by-Step Speed Ripening

Do not use a plastic bag for this process. Plastic traps moisture, which will cause the avocado to grow mold and rot rather than ripen.

  • Step 1: Find a standard brown paper lunch bag. Paper is porous enough to let moisture escape while still trapping the heavier ethylene gas inside.
  • Step 2: Place your rock-hard avocados into the bottom of the paper bag.
  • Step 3: Add the catalyst. Place a ripe banana or a ripe apple into the bag alongside the avocados. Bananas (especially those starting to develop brown spots) are massive producers of ethylene gas.
  • Step 4: Seal the bag. Roll the top of the paper bag down tightly several times to trap the gas inside.
  • Step 5: Store at room temperature. Leave the sealed bag on your kitchen counter. Do not put it in the fridge (cold temperatures halt the ripening process completely).
  • Step 6: Check daily. Depending on how hard the avocados were initially, they should be perfectly soft and ready to eat within 24 to 48 hours.
  • Step 7: The Fridge Pause. Once the avocados yield slightly to gentle thumb pressure, take them out of the bag and put them directly into the refrigerator. This halts the ripening process, holding them in that perfect state for up to three days until you are ready to eat.

This natural, chemical-free hack ensures you never have to delay your guacamole plans or settle for hard, bitter avocados again.
