Ingredients
Scaled for 4 servings
- white chickpeas (kabuli chana)
- potatoes
- onions
- tomatoes
- cucumbers
- green chilies
- fresh coriander
- lemon juice
- chaat masala
- roasted cumin powder
- black salt
- green chutney
Equipment
- Large mixing bowl
Instructions
- 1
Prepare Chickpeas
If using dried chickpeas, soak them overnight and pressure cook until soft but not mushy. (Or use a can of rinsed, drained chickpeas).
- 2
Boil Potatoes
Boil a potato until tender, peel it, and cut it into small cubes.
- 3
Chop Vegetables
Finely chop the onions, tomatoes (remove the wet seeds), and cucumbers.
- 4
Combine Base
In a large mixing bowl, combine the boiled chickpeas, cubed potatoes, and chopped vegetables.
- 5
Add Aromatics
Add finely minced green chilies and a large handful of chopped fresh coriander leaves.
- 6
The Spice Mix
Sprinkle generously with chaat masala, roasted cumin powder, black salt (kala namak), and a tiny pinch of red chili powder.
- 7
Add Tanginess
Squeeze the juice of one whole large lemon over the mixture. (Chaat must be intensely tangy).
- 8
Add Green Chutney (Optional)
For an extra kick, add a tablespoon of spicy mint-coriander chutney.
- 9
Toss Well
Toss everything together vigorously until the chickpeas are well coated with the spices and lemon juice.
- 10
Taste and Adjust
Taste a chickpea. It should hit you with a sharp tang, saltiness, and a bit of heat. Adjust lemon or chaat masala as needed.
- 11
Add Crunch (Optional)
Just before serving, you can toss in crushed papdis or nylon sev for texture, though traditional healthy Chana Chaat often omits this.
- 12
Serve
Serve immediately as a refreshing summer snack, or let it chill in the fridge for 30 minutes to let the flavors meld.
Cooking Tips
- The tomatoes must be deseeded, otherwise, their watery pulp will dilute the sharp spices.
- Black salt (kala namak) is non-negotiable. Its distinct sulfuric flavor is the backbone of all Indian Chaat dishes.
Variations
- Kala Chana Chaat: Made with the smaller, nuttier brown chickpeas.
Chef's Notes & Storage
- A staple on the beaches of Mumbai and the streets of Delhi, often sold by vendors balancing giant wicker baskets.
