Ingredients
Scaled for 4 servings
- mutton (bone-in)
- mustard oil
- whole garlic bulbs
- onions
- yogurt
- ginger
- whole spices (cinnamon, black cardamom, cloves, bay leaf)
- coriander powder
- turmeric
- red chili powder
Equipment
- Earthen clay pot (Handi) or heavy cast iron pot
- Dough to seal
Instructions
- 1
Prepare Mustard Oil
Heat mustard oil to its smoking point in a pan to remove its pungency. Let it cool down completely.
- 2
Marinate in the Pot
In a large bowl (or directly in the clay pot), combine the mutton, sliced onions, yogurt, all dry spices, ginger-garlic paste, and whole spices.
- 3
Add the Oil
Pour the cooled, cooked mustard oil over the meat and mix everything aggressively with your hands. Let it marinate for 1 hour.
- 4
Add Whole Garlic
Wash whole, unpeeled garlic bulbs and bury them directly into the marinated meat mixture. (They become incredibly sweet and buttery when cooked).
- 5
Prepare the Handi
Transfer everything into an earthen pot (Handi) if you haven't already. Do NOT add any water. The meat and onions will release their own juices.
- 6
Seal the Pot
Place the lid on the pot and seal the entire rim tightly with a thick rope of wheat dough (atta) so absolutely no steam can escape.
- 7
Slow Cook (Dum)
Place the sealed pot on the absolute lowest heat possible. (Traditionally done over charcoal embers).
- 8
Do Not Open
Let it cook completely undisturbed for 1.5 to 2 hours. The steam trapped inside cooks the meat, making it melt-in-the-mouth.
- 9
Shake the Pot
Every 20 minutes, using thick oven mitts, lift the pot and give it a vigorous shake to prevent the meat from sticking to the bottom.
- 10
Break the Seal
After 2 hours, carefully cut open the dough seal with a knife. Stand back, as a rush of incredibly aromatic steam will escape.
- 11
Check Doneness
The meat should be falling off the bone, sitting in a thick, rich, dark, oily onion gravy.
- 12
Serve
Serve directly from the clay pot alongside hot Litti, Phulkas, or plain rice. Encourage guests to squeeze the sweet roasted garlic out of the bulbs.
Cooking Tips
- Cooking in a clay pot gives the curry an earthy, rustic flavor that cannot be replicated in a metal pan.
- Sealing the pot (Dum) is critical. It creates a pressure-cooker effect but gently, allowing the flavors to penetrate the bone marrow.
Variations
- Ahuna Mutton / Champaran Mutton: A famous regional variation from Bihar that follows exactly this technique.
Chef's Notes & Storage
- A rustic masterpiece. The whole garlic bulbs cooked in the meat fat are often considered the best part of the dish.
