Ingredients
Scaled for 6 servings
- basmati rice
- bone-in chicken
- yogurt
- fried onions (birista)
- mint leaves
- coriander leaves
- saffron
- milk
- whole spices (cardamom, cloves, star anise)
- ghee
Equipment
- Heavy-bottomed pot with tight lid (Handi)
- Dough for sealing
Instructions
- 1
Marinate Chicken
In a large bowl, mix raw chicken pieces with thick yogurt, ginger-garlic paste, red chili powder, turmeric, and biryani masala.
- 2
Add Herbs to Marinade
Crush half of the fried onions (birista), mint leaves, and coriander leaves and add them to the chicken. Add a little oil, mix well, and marinate for at least 4 hours (preferably overnight).
- 3
Prepare Saffron
Soak a generous pinch of saffron strands in warm milk.
- 4
Wash and Soak Rice
Wash premium long-grain basmati rice until the water runs clear. Soak it in water for 30-40 minutes.
- 5
Boil Spiced Water
Boil a large pot of water heavily seasoned with salt and whole spices (cardamom, cloves, cinnamon, star anise, bay leaf).
- 6
Parboil Rice
Add the soaked rice to the boiling water. Cook it until it is only 70% done (it should still have a firm bite in the center). Drain immediately.
- 7
First Layer
In a heavy-bottomed pot (handi), spread the raw marinated chicken evenly in a single layer at the bottom.
- 8
Second Layer
Spread the 70% cooked hot rice completely over the raw chicken.
- 9
Garnish Layers
Drizzle the saffron milk, melted ghee, remaining fried onions, mint, and coriander over the rice.
- 10
Seal the Pot (Dum)
Cover the pot with a tight lid. Seal the edges completely with wheat dough or aluminum foil so no steam can escape.
- 11
Cook on Dum
Cook on high heat for 5-7 minutes until steam builds up. Then place the pot on a heavy iron tawa (griddle), lower the heat to the absolute minimum, and cook for 35-40 minutes.
- 12
Rest and Serve
Turn off the heat. Let the biryani rest undisturbed for 15 minutes before breaking the seal. Gently fluff from the sides and serve with Mirchi ka Salan and Raita.
Cooking Tips
- This is a 'Kacchi' (raw) Biryani, meaning the chicken cooks in its own juices and the steam from the rice. The seal must be perfect.
- The boiling water for the rice must be as salty as the sea, otherwise the rice will be bland.
Variations
- Mutton Biryani: Use tender bone-in mutton, but increase the marination time (add raw papaya paste as a tenderizer) and the dum cooking time.
Chef's Notes & Storage
- Originating from the kitchens of the Nizam of Hyderabad, it is a dish that defines celebration in India.
