Add Coconut
Add freshly grated coconut and a small handful of cooked rice to the blender.
- 5
Grind
Grind the mixture with a little water into a very smooth, fine paste.
- 6

Pour
Pour a ladle of the fermented, airy batter directly into the center of the pan.

Cover and Cook
Cover with a tight lid and cook for 2 minutes on low-medium heat until the edges are brown and lacy, and the center is soft, fluffy, and cooked through.
Cooking Tips
- The consistency of the batter is crucial. It must be thinner than idli batter but thicker than dosa batter.
- Appams are only cooked on one side. Do not flip them.
Variations
- Egg Appam: Crack an egg into the thick center of the batter immediately after swirling and cover to cook.
Chef's Notes & Storage
- A staple in Kerala, always served with a mild, coconut milk-based vegetable or chicken stew.
