Ingredients
Scaled for 4 servings
- freshwater fish pieces (Rohu or Katla)
- potatoes
- mustard oil
- nigella seeds (kalonji/kalo jeere)
- green chilies
- turmeric
- cumin powder
- coriander powder
- ginger paste
- tomatoes
Equipment
- Wide frying pan or wok
Instructions
- 1
Marinate the Fish
Wash the fish pieces and coat them evenly with turmeric and salt. Let them sit for 10 minutes.
- 2
Heat Mustard Oil
Heat mustard oil in a pan until it begins to smoke. (This removes the raw pungency of the oil).
- 3
Fry the Fish
Carefully slide the fish pieces into the hot oil. Fry them on medium-high heat until golden brown on both sides. Remove and set aside.
- 4
Fry Potatoes
Cut potatoes into thick, long wedges. Fry them in the same fish-infused oil until lightly golden. Remove and set aside.
- 5
Temper Spices
In the remaining oil, add nigella seeds (kalo jeere) and slit green chilies. Let them sizzle for 10 seconds.
- 6
Add Aromatics
Add ginger paste and finely chopped tomatoes. Sauté until the tomatoes are soft.
- 7
Spice the Broth
Mix turmeric, cumin powder, and a tiny pinch of coriander powder with a tablespoon of water, and pour it into the pan.
- 8
Cook the Masala
Sauté the spices on medium heat until the oil separates from the edges.
- 9
Create the Broth (Jhol)
Pour 2 cups of hot water into the pan and bring it to a rolling boil. Add salt.
- 10
Simmer Potatoes
Add the fried potato wedges into the broth, cover, and let them boil until tender.
- 11
Simmer Fish
Gently slide the fried fish pieces into the bubbling broth. Add a few fresh slit green chilies for aroma.
- 12
Finish and Serve
Simmer for 3-5 minutes. Garnish heavily with fresh coriander leaves. Serve piping hot with a mountain of steamed white rice.
Cooking Tips
- Macher Jhol is distinctively a 'broth' (Jhol), so the gravy should be light and watery, not thick and creamy.
- Mustard oil is completely non-negotiable for authentic Bengali flavor.
Variations
- Macher Kalia: A much richer, thicker, and spicier version of fish curry reserved for special occasions and weddings.
Chef's Notes & Storage
- The ultimate comfort food for any Bengali. It is light on the stomach and eaten almost daily in Bengali households.
