Ingredients
Scaled for 4 servings
- papdi (crispy flat flour crackers)
- boiled potatoes
- onions
- tamarind chutney (sweet)
- green chutney (spicy)
- garlic chutney (red)
- chaat masala
- fine nylon sev
- fresh coriander
- raw mango (optional)
Equipment
- Serving platter
Instructions
- 1
Prep the Base
Boil, peel, and finely chop the potatoes. Finely chop the onions and fresh coriander.
- 2
Arrange the Puris
Lay out the crispy Papdis (flat crackers) in a single layer on a serving plate.
- 3
Add Potatoes
Place a generous pinch of the chopped boiled potatoes squarely in the center of each Papdi.
- 4
Add Onions
Top the potatoes with a pinch of finely chopped raw onions.
- 5
The First Chutney
Drip a small amount of the pungent red Garlic Chutney onto each puri (use sparingly, it is strong).
- 6
The Second Chutney
Drip the spicy green Mint-Coriander Chutney onto each puri.
- 7
The Third Chutney
Generously spoon the sweet and thick Tamarind-Date Chutney over everything. This is the binder that holds it all together.
- 8
Dust with Spices
Sprinkle chaat masala and roasted cumin powder evenly over the entire plate.
- 9
Add Raw Mango (Optional)
If in season, add a tiny pinch of finely chopped raw green mango for an extra sour kick.
- 10
The Sev Mountain
Grab a large handful of fine nylon Sev. Generously cover the puris until the potatoes and chutneys are almost hidden beneath the crunchy noodles.
- 11
Final Garnish
Sprinkle fresh coriander leaves over the top of the Sev.
- 12
Serve Instantly
Serve immediately before the moisture from the chutneys makes the crispy base soft.
Cooking Tips
- The chutneys must be relatively thick. Watery chutneys will run off the puri and make the whole plate soggy.
- Unlike Papdi Chaat, Sev Puri NEVER contains yogurt.
Variations
- Cheese Sev Puri: A modern street food twist where a mountain of processed cheese is grated over the Sev.
Chef's Notes & Storage
- A pillar of Mumbai street food culture, originating from the beaches of Juhu and Girgaon Chowpatty.
