Ingredients
Scaled for 6 servings
- long-grain basmati rice
- mixed vegetables (carrots, beans, cauliflower, potatoes)
- paneer
- yogurt
- birista (fried onions)
- biryani masala
- mint and coriander leaves
- saffron milk
- ghee
- whole spices
Equipment
- Large pot for boiling rice
- Heavy-bottomed pot (Handi) with a tight lid
Instructions
- 1
Soak the Rice
Wash premium long-grain basmati rice gently until the water runs clear. Soak it for exactly 30 minutes.
- 2
Marinate Vegetables
In a large bowl, mix chopped vegetables, paneer, yogurt, ginger-garlic paste, biryani masala, red chili powder, turmeric, and half the fried onions.
- 3
Cook the Masala
Heat oil in a heavy pot. Add the marinated vegetables and cook on medium heat for 10 minutes until they are 70% cooked and a thick gravy forms. Turn off heat.
- 4
Boil the Rice
In a massive pot, boil abundant water. Add salt (it should taste like the sea), whole spices (cardamom, cloves, bay leaf, star anise), and a dash of oil.
- 5
Parboil Rice
Add the soaked rice to the boiling water. Cook on high heat for exactly 5-6 minutes until the rice is 70% cooked (it should break with a slight snap, not turn to mush).
- 6
Drain Rice
Quickly drain the parboiled rice in a colander.
- 7
First Layer
In the heavy pot with the vegetable masala, spread the vegetables evenly to form the bottom layer.
- 8
Second Layer (Rice)
Gently spread the hot parboiled rice over the vegetable layer. Do not pack it down.
- 9
Top Layer Aromatics
Sprinkle the remaining crispy fried onions, freshly chopped mint, and coriander leaves over the rice.
- 10
Saffron and Ghee
Drizzle saffron-infused warm milk and a few tablespoons of pure melted ghee evenly over the top.
- 11
Seal for Dum
Cover the pot with a tight-fitting lid. Seal the edges with dough or foil so no steam escapes.
- 12
Dum Cooking
Cook on high heat for 2 minutes, then transfer the pot to a hot griddle (tawa) and simmer on the lowest heat for 20 minutes. Serve hot with Raita.
Cooking Tips
- The rice must only be 70% cooked when boiling. It will finish cooking in the steam (Dum) of the vegetables.
- Using a tawa (griddle) under the pot during the Dum process prevents the vegetables at the bottom from burning.
Variations
- Soya Biryani: Add marinated and fried soya chunks (nutrela) for a high-protein vegetarian option.
Chef's Notes & Storage
- Often controversially called 'Pulao' by meat lovers, a true Vegetable Dum Biryani is layered and slow-cooked, making it distinctly different and far richer than a Pulao.
