Ingredients
Scaled for 8 servings
- flour
- water
- oil
- potatoes
- leeks
- carrots
- cabbage
- curry powder
- green chilies
Equipment
- Flat griddle or pan
Instructions
- 1
Make Dough
Knead flour, water, and salt. Coat the dough balls entirely in oil and let them rest for at least 2 hours. This makes them extremely stretchy (Godamba Roti dough).
- 2
Make Filling
Sauté the chopped vegetables with spices until cooked and flavorful.
- 3
Stretch & Fold
Stretch a dough ball on an oiled surface until paper-thin. Place filling in the center and fold the edges over to form a triangle.
- 4
Cook
Cook on a hot, lightly oiled griddle, flipping to cook all three sides until crispy and browned.
Cooking Tips
- Resting the dough in oil is non-negotiable. It is the only way to get it thin enough without tearing.
- Cook the edges of the triangle by holding it upright with tongs on the pan.
Variations
- Fish Roti: Add canned fish to the filling.
- Beef Roti: Add spicy minced beef.
Chef's Notes & Storage
- A classic street food item easily recognizable by its triangular shape.
